Cooking with Uncle Robert

It's been an interesting week. My mom and step dad's vow renewal was on Saturday and it was beautiful. Our family from Ireland and Washington came to stay for a while so that means there are 13 people in my house...and then the air conditioning breaks. And it's been broken for a full week. The thermostat currently reads 90 degrees. Then my dog had her puppies. Four adorable little things who can't even walk yet. And this morning we received some disappointing news. We can't move into our apartment on Sunday so we have to do some more waiting even though we've been looking forward to it and counting down the days for such a long time. I'm glad I've been surrounded by family through these stressful days. My uncle from Washington wanted to treat us all to something without having to turn on the oven and add to the heat so he made us this frozen dessert that I thought I'd share.

{We used this recipe but didn't use eggs so it's safe to eat raw. We didn't use nuts either. In addition to the ingredients used in that recipe, you'll need wax paper or foil, a skewer, and oil. For this dessert, you'll need about three bags of mini chocolate chips. Make the dough according to the directions, minus the eggs.}

{Depending on the size you want them, use a lemon baller or an ice cream scoop to form the dough and place on a cookie sheet covered in wax paper. Freeze until frozen all the way through.}

{Once frozen, melt about 3/4 of a bag of chocolate chips, adding a little oil so it's easier to dip. Put some unmelted chocolate chips in a bowl next to the melted chocolate to set up a dipping station. Stick a skewer into one of the dough balls and roll the bottom in both bowls, coating a little less than half. Place back on the cookie sheet and freeze again. Makes about two dozen depending on the size.}
